White Chocolate Strawberry Cheesecake

Cheesecake is a deep filled recipe, simple and delicious. It is quick to prepare and a perfect addition as a dessert to make up for guests at home. It has a lovely delicate strawberry taste with a crunchy white chocolate hidden within. 

Preparation time: 15 minutes
Cooking time: 20 minutes
Servings: 12 slices

600 gms of cream cheese
250 gms of digestive biscuits
125 gms of butter
400 gms of strawberries in their juice
140 gms of icing sugar
400 ml double cream
200 gms of white chocolate chips
1 teaspoon of vanilla extract
Handful of chocolate chips

  1. Break the digestive biscuits into fine crumbs using a food processor. 
  2. Melt the butter in a saucepan over medium flame. Remove the saucepan from the heat and add the crushed biscuits. Mix well until the biscuit pieces absorb the entire butter. 
  3. Line a spring form tin with cling film. 
  4. Place the biscuit and butter mixture into the tin. Use gentle push or press the mixture to set the biscuit as a perfect base. Refrigerate the tin for about an hour. 
  5. Drain the tin containing strawberries. Retain the juice in the tin. 
  6. In a large mixing bowl, add cream cheese, vanilla extract and icing sugar. Whist thoroughly. 
  7. Add the strawberries and 3 tablespoons of the juice into the cheese mixture. Whisk thoroughly. Strawberries break into fine fragments and distributed evenly throughout the cheese mixture. 
  8. Melt the white chocolate chips and allow it to cool for a minute. 
  9. Add the white chocolate mixture into the cheese mixture. 
  10. Add whipped cream as the final step. 
  11. When the chocolate and strawberry filling is smooth, add it to the tin containing the biscuit in an even manner. Push down the mixture gently and fill the tin to the top. 
  12. Refrigerate the tin for two hours. 
  13. Once the cheesecake is set, smooth the sides with a palate knife and decorate it with chocolate chips and fresh strawberry pieces. Serve chilled.
