Spicy baja Pizza with pineapple

Baja shrimp grilled pizza is a wonderful recipe for the weekend. The dish offers a relishing opportunity for seafood lovers with shrimp and pineapple toppings.

Servings: 8


1 packet of Baja citrus marinade
1 tablespoon of olive oil
1/4th cup of orange juice
450gms of large shrimp, peeled and deveined
½ red bell pepper, cut into 2 halves
½ yellow bell pepper, cut into 2 halves
1 small zucchini, sliced into ½ inch thick slices
450gms of fresh pizza dough
250gms of pineapple rings, drained and cut into bite size pieces
2 cups shredded Monterey jack cheese
1 tablespoon of chopped fresh mint


  1. Mix shrimp marinade with 1/4th olive oil and orange juice in a small bowl. 
  2. Place large shrimp and vegetables in two separate resealable bags.
  3. Add the marinade mixture into the bags and shake well. This will coat the shrimp and vegetables with the mixture to perfection. 
  4. Place the marinated bags in the refrigerator for 15 minutes. 
  5. Remove the shrimp and vegetables from the bags. Drain excess marinade from the bags. Thread shrimp onto skewers.
  6. Grill the vegetables for 5 – 8 minutes at medium heat or until they become crisp. 
  7. Grill shrimp for 7 minutes or until they turn pink. Turn them occasionally to avoid overheating. 
  8. Cut the vegetables into bite size pieces. 
  9. Remove the shrimp from skewers. 
  10. Stretch the pizza dough on a flour surface to 14 inches. Brush the remaining olive oil on the top of the dough. 
  11. Place the oil sided face down on the grill.  
  12. Medium heat the dough for 2 minutes. 
  13. Flip the crust using spatula. 
  14. Season the flipped face of the crust with cheese, grilled shrimp, vegetables and pineapple pieces. 
  15. Grill the pizza for another 5 minutes at medium heat. 
  16. When cooked, the crust becomes brown and the cheese melts down. 
  17. Remove the crust and sprinkle with mint and grated cheese.
