Potato and Leek Soup

Potato and leek soup is a perfect addition to the dining table. It is tasty and healthy. It is simple and easy to prepare the soup. 

Preparation time: 5 minutes
Cooking time: 30 minutes
Servings: 4


3 large leeks, cut in lengthwise. Separate and clean. Use only the white and green parts, chop.
2 tablespoons of butter
2 cups of water
2 cups of chicken broth
400gms of potatoes, peeled and sliced into ½ inch slices
A dash of marjoram
1/4th cup of chopped parsley
2 teaspoons of chopped fresh thyme
Tabasco sauce/red chili sauce
Salt, to taste
Pepper, smashed, to taste

  1. In a saucepan, add butter, leeks, salt and pepper. Cook under medium flame with lid for 10 minutes. Check the mixture. The leeks should not be turned brown.
  2. Add water, potatoes, and broth into the mixture. Stir well and simmer for 20 minutes on low flame. 
  3. Scoop half of the mixture in a blender. 
  4. Pour the blended mixture and add to the saucepan once again.
  5. Add marjoram, parsley and thyme. Stir thoroughly. 
  6. Sprinkle chili sauce to taste. 
  7. Add salt and pepper, to taste, and serve hot.
