  1. The first step involves creating the base for the pizza. Mix bread flour, salt and yeast in a container. Add 200ml of water and olive oil to make the dough soft and wet. Place the dough on a slightly floured surface and knead the dough. Cover the dough with a tea towel and set aside.
  2. Mix passata, basil and crushed garlic clove together and season to taste to create a perfect a sauce. Leave the mixture at the room temperature while you attend to the dough to prepare the base.
  3. Roll the dough evenly on a floured surface using a rolling pin. Make sure that the thickness is less as it will rise when placed in the oven. Lift and place the rounds on a floured baking sheet.
  4. Heat the oven to 240 degrees. Place another baking sheet or an upturning baking tray on the top shelf. Place the rounds into the oven and smooth the sauce using a spoon. Add tomatoes, cheese and drizzle olive oil. Bake the mixture for 8 to 10 minutes.
  5. Remove the pizza and serve hot with the addition of basil leaves and sprinkle olive oil for a moist appearance.
