1 tablespoon of fresh basil

- The first step involves creating the base for the pizza. Mix bread flour, salt and yeast in a container. Add 200ml of water and olive oil to make the dough soft and wet. Place the dough on a slightly floured surface and knead the dough. Cover the dough with a tea towel and set aside.
- Mix passata, basil and crushed garlic clove together and season to taste to create a perfect a sauce. Leave the mixture at the room temperature while you attend to the dough to prepare the base.
- Roll the dough evenly on a floured surface using a rolling pin. Make sure that the thickness is less as it will rise when placed in the oven. Lift and place the rounds on a floured baking sheet.
- Heat the oven to 240 degrees. Place another baking sheet or an upturning baking tray on the top shelf. Place the rounds into the oven and smooth the sauce using a spoon. Add tomatoes, cheese and drizzle olive oil. Bake the mixture for 8 to 10 minutes.
