Noodle soup is healthy and up for grabs at any point of time. The recipe is simple to make and has a great potential in terms of nutritional value. A hot soup is a perfect combination on any rainy day.

Ingredients:
2 tablespoons of extra virgin olive oil
1 rib celery, sliced
1 medium carrot, sliced
1 garlic clove, smashed
1/4th medium onion, chopped
1/4th teaspoon of kosher salt
1/3rd cup of orzo/small pasta/egg noodles/broken spaghetti
4 cups of low sodium chicken broth
Handful of fresh parsley/dill/basil leaves, chopped
½ teaspoon of fresh lemon juice
Freshly ground black pepper

Method:
- In a saucepan, heat olive oil on medium flame.
- Add all the vegetables, garlic and onions. Cook the mixture for about 6 minutes until they all become tender.
- Add pasta and cook for another 3 minutes, until the mixture turns golden color.
- Add chicken borth and boil over high heat.
- Close the saucepan and cook for another 8 minutes or until the pasta turns tender.
- Add lemon juice and stir well.
- Season the soup with salt, pepper and herbs(optional).
- Serve hot with crackers and cheese sticks.
