Noodle Soup

Noodle soup is healthy and up for grabs at any point of time. The recipe is simple to make and has a great potential in terms of nutritional value. A hot soup is a perfect combination on any rainy day. 

Preparation time: 10 minutes
Cooking time: 20 minutes
Servings: 4


2 tablespoons of extra virgin olive oil
1 rib celery, sliced
1 medium carrot, sliced
1 garlic clove, smashed
1/4th medium onion, chopped
1/4th teaspoon of kosher salt
1/3rd cup of orzo/small pasta/egg noodles/broken spaghetti
4 cups of low sodium chicken broth
Handful of fresh parsley/dill/basil leaves, chopped
½ teaspoon of fresh lemon juice
Freshly ground black pepper


  1. In a saucepan, heat olive oil on medium flame. 
  2. Add all the vegetables, garlic and onions. Cook the mixture for about 6 minutes until they all become tender. 
  3. Add pasta and cook for another 3 minutes, until the mixture turns golden color. 
  4. Add chicken borth and boil over high heat. 
  5. Close the saucepan and cook for another 8 minutes or until the pasta turns tender. 
  6. Add lemon juice and stir well. 
  7. Season the soup with salt, pepper and herbs(optional). 
  8. Serve hot with crackers and cheese sticks.
