A soup before the meal is a perfect way to savor the rest of the meal. Green jade soup is healthy and offers the best taste. It is relishing and a perfect addition to the dining table.

Ingredients:
4 dried shiitake mushrooms
1 cup boiling water
6 cups of vegetable stock
1 ½ tablespoon of grated ginger root
1 ½ cup of thinly cut carrots
3 cups of chopped bok Choy, tatsoi, Chinese cabbage
1 ½ cup of thinly sliced onions
2 cups of firmly packed spinach
1 cake of tofu, cut into cubes
1 teaspoon of dark sesame oil
1 green onion chopped

6 cups of vegetable stock
1 ½ tablespoon of grated ginger root
1 ½ cup of thinly cut carrots

Method:
- In a cooking bowl, add water and cook shiitake mushrooms for 10 minutes on medium flame.
- In another soup pot, boil the vegetable stock for 10 minutes.
- Add ginger, onions, bok choi/tatsoki and carrots. Turn the flame to low and simmer for 10 minutes. Vegetables should become tender.
- Drain mushrooms from the cooking pot and add the liquid to the soup pot.
- Thinly slice the mushrooms and add to the soup.
- Add spinach and stir well. Simmer on medium flame for 10 minutes.
- Add a pinch of salt to taste. Mix well.
- Sprinkle sesame oil and green onions. Serve hot.
