Chicken Teriyaki

Chicken teriyaki is a wonderful dish that is shiny, colorful and easy to cook. Thigh meat has more flavor and is the preferred ingredient in the dish. However, people can look for general chicken meat and cook a tasty teriyaki. 

1 large chicken leg
1 teaspoon of grated ginger
1/4th teaspoon of salt
2 teaspoons of vegetable oil
1 tablespoon of honey
1 tablespoon of mirin
1 tablespoon of sake
1 tablespoon of soy sauce


  1. Rub grated ginger and salt to the chicken leg and allow it to sit for about 30 minutes. 
  2. Using paper towels, remove the excess ginger pulp from the chicken. 
  3. In a deep cooking pot, heat oil on medium flame. 
  4. Add chicken leg to the cooking pot. Make sure that the skin side is bottom. Cook until the chicken turns golden brown on one side. 
  5. Flip the chicken and add 1 tablespoon of sake and cover the pan with a lid. Allow the chicken to cook on medium flame for 5 minutes. 
  6. While chicken is cooking, prepare teriyaki using 1 tablespoon of honey, mirin, sake and soy sauce. Stir well to combine the mixture.
  7. Remove the lid from the cooking pot and drain oil and water. Use paper towels to remove excess oil. 
  8. Add the 3/4th teriyaki mixture into the cooking pot and turn the flame to high. 
  9. Flip the chicken continuously to coat the mixture evenly on all the sides. 
  10. Follow the procedure until most of the water is evaporated and the teriyaki turns thick.
  11. Add remaining teriyaki sauce over the chicken before serving.
