Chicken Adobo

If it’s a weekend then you have a perfect way to celebrate it with a perfect midday meal. Chicken adobo is a braised recipe with fresh seasonal products that will relish your senses. 

Preparation time: 40 minutes
Cooking time: 45 minutes
Servings: 4

125 ml - apple cider vinegar
80 ml  -  soy sauce
6 cloves of bruised garlic
1/4th teaspoon of finely chopped ginger
2 red chillies sliced
4 bay leaves
55 gms  - brown sugar
1 tablespoon of black peppercorns
1 large onion thinly sliced
1.2 kg of chicken wings
Steamed white rice


  1. In a large cooking pot, add fresh water, vinegar, soy sauce, garlic, ginger,chillies, bay leaves, sugar, peppercorns and onions. Stir well to mix the ingredients thoroughly. Cook for about 10 minutes. 
  2. Add chicken wings to the mixture and stir well. Marinate the mixture for 30 minutes. Maintain the flame on medium. 
  3. Transfer the chicken mixture into another large cooking pot. Heat the container on high flame for 10 minutes. Reduce the flame to medium and cover the pot with aluminum foil. Allow the mixture to simmer for 25 minutes until the chicken is cooked. 
  4. Remove the wings carefully from the sauce and transfer to a large bowl. Allow the sauce to simmer for another 15 minutes or until it becomes thick. 
  5. Add the chicken wings again in the sauce and cook for another 10 minutes. This will tender the chicken further and juices it with the sauce. 
  6. Serve the wings with sauce and sliced chillies along with hot steam white rice.
