Grated cheese – mild or cheddar/Monterey jack
Olive oil or grapeseed oil

Preparation time: 5 minutes
Cooking time: 5 minutes
Servings: 2

  1. In a large frying pan, add one tablespoon of oil using spatula. Place the pan on medium flame.
  2. Add one flour tortilla in the pan and stir occasionally to avoid burning. Flip the tortilla for every 20 seconds. Air pockets will form on the surface of the tortilla. This is a resemblance that it is cooked.
  3. As soon as the air pockets appear on the surface, sprinkle a handful of grated cheese. Make sure that the cheese does not fall on the pan. Turn the flame to low during this process.
  4. Cover the frying pan with a lid for about 1-3 minutes. As the pan is already at high heat, it will melt the cheese and turn the bottom layer of the tortilla into brown color.
  5. Using a spatula, turn the entire tortilla and cook for about a minute. Make sure that the other side turned to brown color.
  6. Flip the tortilla in half and remove from the pan.
  7. Using a knife, cut the tortilla into wedges. Serve hot.
