Broccoli Sun-dried Tomato Fusilli

A simple dish to savor in the evening. Easy to prepare and an affordable dish.

500 gms of Fusilli
½ cup of fresh olive oil
1 teaspoon of salt
1/4th cup of chopped garlic
2 tablespoons of fresh thyme leaves
12 dried tomatoes
1 quart broccoli florets
1 1/4th cup of Parmesan cheese

  1. In a cooking pot, add fresh water, salt and pasta. Cook the pasta until it becomes al dente.  Keep the flame on medium. 
  2. In another non-stick saucepan, pour olive oil and heat over it over a high flame. Add salt and garlic in the oil. Stir well until garlic turns golden brown. 
  3. Add dried tomatoes and thyme leaves to the mixture. Stir well and simmer for 5 minutes on medium flame. Add broccoli and stir well.
  4. Drain the water from the pasta and add it to broccoli mixture. Stir well and simmer of a minute. 
  5. Add I cup of Parmesan cheese. Stir well to mix well the entire mixture thoroughly. 
  6. Serve the dish with fresh dusting of Parmesan cheese.
